Our Djiboutian meal was Skoudehkaris, Laxoox and Djibouti Banana Fritters with Date Caramel. Skoudehkaris is a lamb and rice dish with tomatoes and cardamon. The cardamon gave it a nice flavor. It was delicious wrapped in the Laxoox. Laxoox is a flat bread with yeast in it, oxymoron? They taste a lot like pancakes. I had one the next morning with butter and cinnamon sugar. Yum. The banana fritters were OK. They were fried in vegetable oil. We almost never fry so maybe didn’t have the oil hot enough to make them crispy.
