Cyprus πŸ‡¨πŸ‡Ύ

Our Cyprus meal was Ofto Kleftiko (Roast Lamb), Briam (Mediterranean Roast Veggies), Afelia Potatoes (Red Wine Potatoes) and Firikia Glyko (Brandy Apples). Rob liked the lamb but I thought it was a little gamey, maybe just not cooked right. The veggies were potato, zucchini and eggplant layered with a tomato sauce. The potatoes and zucchini were good but the eggplant was kind of mushy. The roasted potatoes were delicious! They were tossed with olive oil and red wine and roasted until crispy on the outside and tender on the inside. The poached apples were our favorite part of the meal. Apples simmered in sugar, water and cinnamon stick with a little apricot brandy added at the end. We topped them with vanilla ice cream. Yum!!

Cypress is an island country in the eastern Mediterranean Sea. i would love to visit some of it’s beautiful beaches such as Kourion Beach. There are some really beautiful and interesting resorts too.
