Costa Rica 🇨🇷

We made our Costa Rican meal back in early December. I am behind on posting global meals because we’ve been busy with foster puppies, planning for vacation, and work gets in the way a lot too ;). The meal was Heart of Palm Salad, Costa Rican Pork Tamales, Rice and Beans, plantain chips and Flan de Coco. I didn’t care for the texture of the palm hearts but they were canned so probably better fresh? The Pork Tamales were a dense cornmeal mixture mixed with pork and vegetables wrapped in banana leaves – very tasty. The Flan de Coco was deliciously creamy and coconutty. This is the first time I made flan so I was pretty happy about it.

Costa Rica looks beautiful with a lot of gorgeous waterfalls. You can stay at The Westin Reserva Conchal for a mere $730 a night! We can all dream, right? The Tree House Lodge looks really cool too!! It is only $200 a night, which for as cool as this place looks, not bad!

Costa Rica makes up less than 0.5% of the worlds landmass but hosts 5% of the earths biodiversity. 25% of the country is national parks, more than any other country in the world. And they use 95 to 99% renewable energy.

Costa Rica is known for Diquís Spheres which are spherical stone sculptures in the Isthmo-Colombian area, primarily carved from gabbro, a coarse stone rich in iron and magnesium. It is believed they were placed along the pathways that approached the houses of chiefs. Some are over 6.5 feet across. The largest weighs over 15 tons!
